One&Only The Palm, the eagerly anticipated new luxury hotel in Dubai will be opening its doors this winter, offering a range of culinary delights for its guests to enjoy from Michelin-starred chef Yannick Alléno. ZEST

The resort’s main restaurant, ZEST, blends the culinary influences of the Middle East, Asia and the West within a fresh and interactive dining concept. Main courses are prepared from two theatrical show kitchens where guests are asked to select one key base - poultry, meat or fish – prepared to their preference.

An elegant and light ambience is created with expansive floor-to-ceiling windows and modern finishes and fabrics. Glass leaf and cut quartz crystals, accent flourishes of the arabesque-feel interior, promotes a conservatory-style indoor dining environment. With a stunning setting overlooking the grand pool and Moorish gardens, ZEST provides a range of indoor and al fresco dining options for up to 120 guests.

STAY by Yannick Alléno

The hotel's speciality restaurant, STAY by Yannick Alléno reinvents traditional cooking methods to create imaginative and contemporary cuisine.

The high timber walls and monochromatic palette of black, bronze and silver inside STAY by Yannick Alléno sets the restaurant against a decadent backdrop, where guests can experience a fine-dining experience without the traditional formality. The opulent atmosphere exudes elegance with its rich burgundy vaulted ceilings and Bohemian black crystal chandeliers.

A curved 'S' shaped lounge which overlooks the restaurant encourages guests to socialize, whilst with The Pastry Library guests are invited to play an active role in the creation of their desserts from selecting the ingredients to observing the chef de patisserie prepare the dessert. Guests who book The Sharing Table can benefit from a private menu, which offers a collection of signature dishes, pastries and bespoke Magnum Wine List for parties of 12.
